Private beaches and seafront restaurants: keeping flies at bay
Heat, fish waste, sweet cocktails: in high season, Riviera beach restaurants attract flies. Sources, UV traps, kitchen access: the action plan.

From June to September, a private beach on the Riviera brings together everything that attracts flies: heat, cooking smells, fish and seafood waste, sweet cocktails and constant comings and goings between the terrace and the kitchen. For a restaurant right on the water, at Larvotto, in Cap-d'Ail or on the Croisette, a few flies around a plate are enough to spoil a lunch, and they are a genuine hygiene issue. The good news: the pressure can be brought under control, provided you deal with the sources rather than just the insects.
Which flies, and where do they come from?
Identifying the species already tells you where to look for the source:
- The house fly develops in moist organic matter: bins, residues under equipment, poorly stored waste. In midsummer, its cycle from egg to adult can be completed in around ten days.
- Blowflies, blue or green, are drawn from afar by fish, shellfish and meat waste.
- Fruit flies, or vinegar flies, swarm around ripe fruit, syrups, beer kegs and poorly rinsed bottles: the cocktail bar is their territory.
- Drain flies, small, grey and hairy, breed in the organic film lining floor drains, grease traps and pipes.
The risk goes beyond nuisance: flies land on waste and food alike and carry bacteria such as salmonella on their legs. In a kitchen subject to HACCP rules, their presence in a preparation area is a hygiene lapse to be corrected without delay.
Remove the sources first
No device will make up for an open bin in the sun. The key points in season:
- bins with lids and pedals, emptied as often as necessary during service and washed regularly;
- fish and seafood waste in sealed bags, removed quickly or kept chilled;
- a shaded bin store, cleaned and rinsed, with no liquid on the floor;
- floor drains and gullies scrubbed mechanically: the greasy deposit lining the pipes feeds the larvae;
- empty bottles rinsed, bar fruit kept chilled;
- the space under wooden decking inspected and cleaned: scraps that fall between the boards make excellent breeding sites.
On the beach, clear tables quickly, cover dishes waiting to be served and do not leave cocktail glasses standing in the sun. Piles of rotting seaweed at the water's edge also attract certain flies: removing them regularly is part of prevention.
Close off access to the kitchen
The terrace will never be sealed, but the kitchen must be, as far as possible: insect screens on windows, self-closing service doors, strip curtains or air curtains on the delivery entrance and on the pass between kitchen and dining room. Watch the morning deliveries too: a single door propped open is enough to let flies in for the whole day.
UV traps: the right model in the right place
UV insect light traps work well in kitchens and back-of-house areas, provided a few rules are followed:
- in food areas, choose glue-board models over electric grids, which scatter insect fragments;
- install them away from work surfaces and out of sight from outside: if it can be seen from the beach, a trap draws flies indoors;
- avoid competition from direct sunlight and strong lighting;
- replace the tubes at least once a year, ideally before the season: they lose their effectiveness long before they stop glowing;
- change the boards regularly and note what they catch: it is a valuable monitoring tool.
On the terrace, a well-aimed fan deters flies. Insecticide aerosols during service, on the other hand, are out of the question: they contaminate tables and food without dealing with the cause.
Our protocol for beach restaurants
Our protocols are HACCP-compatible and follow four steps:
- Free on-site audit: identification of the species, search for breeding sites and entry points, from the kitchen to the beach.
- Personalised action plan: waste, sealing, choice and placement of traps.
- Discreet intervention, at times that protect your service, by a team that can arrive without distinctive markings: monitoring, then graduated treatment, mechanical, biological and finally targeted chemical treatment with approved products if necessary.
- Reporting: electronically signed reports with photos, and treatment certificates downloadable from your client area, ready for your audits.
In the event of contamination in a food area at the height of the season, our 24/7 on-call service is triggered after a first phone call, with a callback within 6 hours. Find out more about our work with restaurants and food businesses and on our page about flies.
End the season with peace of mind
Fly pressure that does not drop despite these measures points to a hidden source: a grease trap, a pipe, a waste store or decking. An audit will find it and help you prepare for next season now, throughout Monaco and across the Riviera.

Frequently asked questions
- Are UV traps enough to deal with flies in a beach restaurant?
- No. Well placed, they catch the flies that come in and serve as a monitoring tool, but they do not remove the sources: bins, fish waste, drains or decking. Waste management and a well-sealed kitchen remain the priority.
- Can insecticide be sprayed on the terrace during service?
- No. An aerosol during service contaminates tables and food without dealing with the cause. In a HACCP kitchen, any treatment must be targeted, use approved products and take place at times that protect your service.
- What should we do about a fly invasion at the height of the season?
- Call +377 37 70 70 02: for contamination in a food area, our 24/7 on-call service is triggered after that first call, with a callback within 6 hours. For a preventive plan, request your free quote.
